OAT, COCOA & WALNUT COOKIES…on-the-go-cookies!

“Which reminds me of a fortune cookie: you often find your destiny on the path you take to avoid it.”

I wake up every morning to my mug of coffee and Garfield screams loudly in my face…FACE IT!! Nothing like getting the message loud and clear in the morning. What a way to begin my day, but I love this mug to bits. It’s been with me for almost 20 years; I picked it up from a high street shop in London years ago. burger+buns,++walnut+cocoa+Oat+cookies5
I have been ‘facing it’. Had a back to school party for the kids when the vacations finally ended. Of course the vacations promptly got extended soon after due to a heat wave. Thereafter, the son was home for a week with unexplained nausea and throat issues. Soon the inevitable happened. H1N1 hit our part of the world and the daughters’ class got quarantined because of a child in her class who tested positive. Finally all was well, and then both my kids decided to get a mild attack of H1N1…so of course, home again! SIGH…

These are more like ‘welcome back home cookies’ and I made them on a whim. The daughter seems to have developed a sudden dislike for walnuts in cookies. I’m like, ‘What? But you’ve always loved them?’ Well, I have to face it. They change like chameleons these days, and she did too. So I set off trying to reduce the ‘feeling’ and visible presence of walnuts, but wasn’t one to do away with them altogether. These are my super easy new faves that I make on the go. burger+buns,++walnut+cocoa+Oat+cookies2If you don’t want to make them with cocoa, just omit the cocoa, and throw in an additional 1/4 cup flour. Chocolate chips might be a super idea too.I love cookies, but I love them even more to pack a healthy punch. So I whirred them in the processor with sugar first & then with cocoa powder, and made these delicious cookies. Were yum. Couldn’t resist tasting a warm one out of the oven to check my creation…Mmmmm! I even crumbled some deliciously warm ones & topped them with a scoop of vanilla ice cream. Uber YUM!

Method:
  • Preheat the oven to 180C. Lightly grease or line 3-4 cookie sheets with parchment paper.
  • Whiz the walnuts with 1/4 cup vanilla sugar in the processor in short bursts till finely chopped. Add the cocoa, salt, baking soda and baking powder, & process again till well mixed, about 1 minute.
  • Place the butter, remaining sugar, eggs and vanilla extract in a large bowl and beat till well blended and fluffy. On low speed, beat in the flour till incorporated completely.
  • Now fold in the 3 cups of oats with a spatula, combining well.
  • Place heaped tablespoons on the greased cookie sheets, leaving an inch of space around for spreading. Bake for 12-15 minutes til done. Keep an eye on them after 12 minutes so they don’t get too brown.
  • Cool on racks and store in an airtight container.

Have you met my little winged companion who seems to have adopted me? Sits on the fence and watches me each time I take the paraphernalia out to click some snaps. The dove is about 3 weeks old, and hatched in a nest in our hedge. Loves being clicked!!baguettes

You've managed what I consider to be next to impossible: made delicious cookies that look both moist and crunchy! 8-D

Although I would not omit the cocoa, I think my husband would prefer the chocolate chips; as you've observed, sometimes we just have to 'face it' and indulge our loved ones in their preferences!

I hope that your kids have fully recovered – it may very well be fortunate that they caught the earliest (and relatively mild) version of this virus. Perhaps they've now built up immunity . . .

Of course, I would consider these cookies to be an excellent vaccine! And I love the dove. 8-D

These cookies look on the verge of being healthy, with all those oats and nuts in them. Maybe if I replaced some of the flour with whole wheat, they'd be healthier yet. The perfect cookie to nurse your kids back to health!
    Cheers,
    Irina

I adore big, fat, chewy cookies, and those are right up my cookie alley! I love the cocoa in an oatmeal cookie, minus raisins, as I do NOT like raisins in my oatmeal cookies – so these are perfect since I do love walnuts 🙂

  • Jamie

Look stupendous! Lucky kids to have a mom that throws them back to school parties! I have to make these cookies – they look better than the ones I just made. And mmmm crumbled over ice cream is absolutely dreamy!

It is funny how kids are so fussy at times and their preferences change on a whim … almost. I love the look and sound of these cookies. I would happily eat them all! 🙂

Hi, Deeba. Thank you very much for your kind comment. I don't know why sometimes visiting a blog comes to a computer error but it does and it is so frustrating… I come around here often too but I feel a little ashamed sometimes about my bad english. That's the reason why I stay silent most of the times but I really love your blog and your photos. You know, you've reached a personal, beautiful and great style and not everybody can say that.

I hope you can forgive me for my english, sometimes I hesitate to wirte a comment, I don't know if people would understand right what I mean.

  • Alexandra

Yeah. I so need a coffee mug that says that. These cookies look like the bomb. I love, love, looveee the combination of oatmeal and cocoa.

I'm trying to find a way to incorporate nuts into my cookies without my sunday school class recognizing them myself lol. Some kids are entirely too picky to even try. This seems like a great way to get the flavor but not the noticeable chunks 😛

  • lisa (dandysugar)

Oh, I love that Garfield look on your mug, so precious! Love the sound of these cookies with the oatmeal and cocoa. Sometime, I do love a good chunky cookie along with my coffee in the morning!!

  • Dharm

  • Matt

these cookies look just like clif bars! some of my favorite energy bars. i think i may have to make them and see if the taste is similar

  • Mohit Mendiratta

Tried a variation of these as had no walnuts at home. Tried mixing ground cinnamon and raisins inplace of walnuts and cocoa. also added couple of tsp gluten for chewiness.Came out brilliantly.
Not sure how to ensure the base of cookies gets baked properly, it was yellowishly.
I used a carbon steel based (brand alda) springform tray with butter paper.

    • Deeba @ PAB

Such fun reading how differently you baked the cookies. Interesting to note that gluten added some chewiness. NICE! I used to have a similar ‘yellowish’ issue in my early days of baking cookies. I think that was probably because butter paper tends to release butter or oil when lining a cookie sheet and hence the yellowish tinge. You could try using parchment paper.

Thank you so much for stopping by. I'd love to hear from you.
