Wholewheat Plum Frangipane GaletteWholewheat Plum Frangipane Galette … it is strange that when the season is bidding adieu, the palpitations grow. I tend to hang on to the last fruit like they are going to go out of fashion; trying to extend their shelf life beyond reasonable measure. Plums have sadly gone. I have been happy looking at the last lot in the fridge for past 2 weeks.

Bidding goodbye to summer is never easy given my deep emotional bond with stone fruit. I still have one last batch of frozen plums. Thoughts of sorbet, granita, fro yo dance in my head!

Wholewheat Plum Frangipane Galette Did I mention my uber healthy baking spree of late? I have always attempted to keep my baking healthy. I went one baby step further with this Wholewheat Plum Frangipane Galette. I’ve never made a galette or pie with mainly whole wheat in the pastry. I am usually haunted with scary thoughts. What if it all falls apart; what if the pastry does not hold; and what if it does not taste good?

Wholewheat Plum Frangipane Galette Whole wheat is not what one might traditionally use in pie crusts, but trust me, it works well. You got to give it some extra TLC. Surprisingly, the crust was buttery, light, flaky and delicious! A bit fragile, but expected. Take baby steps from all purpose towards whole grain. There’s a whole new world out there!

Wholewheat Plum Frangipane Galette This pie crust is not a 100% wholewheat. I added a teeny bit of plain flour. Next time, I’ll be bolder. See baby steps? I’m doing it. You can too.

Plum lemonadeI made lemonade that day as well….plum lemonade to be precise. Not to be served with the moorish galette, but here anyway. Simple and a fun way to include more fruit in your diet. The kids gulped it down greedily asking for some everydayToo late! It’s goodby plums for now! We’re already staring fall in the face.

Wholewheat Plum Frangipane Galette I’ve made plenty of galettes. It is one of my favourite forms of pie. If you are lucky and still in plum season, then you could try making this rustic free form tart.  You could always substitute plums for peaches, nectarines, cherries, strawberries, blueberries, apples, figs, pears, or frozen fruit. A combination of fruit works equally well!


Recipe: Wholewheat Plum Frangipane Galette

Summary: A delicious wholewheat plum frangipane galette with a light, buttery, flaky crust. Frangipane in here is as delightful as can be. It adds to the taste, and also offers a layer between the pastry and fruit. This keeps the pastry from going soggy!

Prep Time: 15 minutes
Total Time: 1 hr 15 minutes

  • Wholewheat galette pastry crust
  • 130g wholewheat flour {aata}
  • 25g plain flour
  • pinch salt
  • 100g butter, diced small, chilled
  • Juice of 1/2 lime
  • 2-4 tbsp chilled water
  • Almond Frangipane 
  • 60g almond meal
  • 60g unsalted butter, room temperature
  • 60g sugar
  • 1 egg
  • 10g whole wheat flour
  • 1/2 vanilla bean, scraped
  • Topping
  • 300g plums, stoned, quartered
  • juice of 1/2 lime
  • 45g brown sugar {divide 30+15}
  • 1 tbsp milk


  1. Wholewheat galette pastry crust
  2. Place the 2 flours and salt in the bowl of food processor and pulse to mix and repeater.
  3. Add the chilled diced butter and lime juice and process again briefly until you have a pea sized mix.
  4. Add chilled water 1 tbsp at a time and process until the dough comes together when pinched between your fingers.
  5. Turn out, knead very briefly to pull together. Flatten into a round disk, wrap in cling-warp and chill for about 2 hours. {There’s a nice pastry tutorial here}
  6. Almond Frangipane 
  7. Run all the ingredients in bowl of food processor until nice and smooth. Refrigerate until required.
  8. Topping
  9. Toss the plums with the lime juice and 30g sugar. Reserve in a bowl.
  10. Preheat the oven to 190C.
  11. Roll the pastry dough out on a large piece of parchment.
  12. With an offset spatula, spread the frangipane over the base, leaving a border of about 1 1/2″.
  13. Top with the resrved plums.
  14. Gently draw the pastry up around the filling, using the parchment as a guide.
  15. Pleat the pastry around the filling, pressing gently into place. Transfer onto baking tray.
  16. Give the border a quick brush with milk, sprinkle over the remaining 15g brown sugar.
  17. Bake for about 50-60 minutes until the crust is golden brown and firm.
  18. Cool for at least an hour before cutting. Slice and serve with unsweetened low fat cream.
  19. Note: We enjoyed the galatte chilled as well. It kept well in the fridge for 2 days.

It’s a result of blogger interactions, loads of food talk, some food cravings, events missed and repented, flavours virtually thrown into the air and talked about….Savoury Chicken GaletteI missed a picnic a few weeks ago with the Delhi food bloggers bunch. There was so much talk about food, what who was making, baking, getting,  that I had pangs …not hunger pangs but pangs of missing out on something good!  The Great Cookaroo threw in yolks after yolks to make her to go pastry cream from Dorie Greenspans Baking with Julia. I had the book on the shelf. A favourite from a favourite food blogger who gifted it to me from Bangalore. {Thank you again Suma!}

Savoury Chicken Galette Then there was talk of pickled green garlic pesto which immediately threw my tastebuds in overdrive … that sounded drop dead delicious. I wanted some! My chance soon came as a bunch of us met again at the Ty.phoo Tea & Food pairing eventSangeeta  carried a bottle of pickled green garlic pesto for me.

Savoury Chicken Galette with green garlic pestoSmothered on a toast the next morning, it had a comforting homey feel! It had all the hints of the green chutney sandwiches my dad often made … beautiful flavours that teased the palette. As I sat in the kitchen, the laundry machine whirring punishingly in the background, I reached out for Baking with Julia! The book is a winner. Read it, bake from it, drool over it, learn from it. I wanted to bake something savoury that morning, and settled for Cheese & Tomato Galette!

Savoury Chicken Galette The galette dough was done in seconds, a Flo Baker recipe from the book. Don’t you love a dough that comes together in a heartbeat, is fuss free, smooth, pliable and uses pantry staples? I didn’t even need to rest it since it held beautifully, winter ensuring a fridge like cold kitchen. {Feedback from batch #2: An overnight rest in the fridge yields a pliable nice dough too.}

Savoury Chicken Galette I used everything I had on hand! Pickled green garlic pesto, mozzarella, chicken salami, then some roasted onion balsamic jam, cherry tomatoes, smoked sea salt, pepper. Finished it off with a drizzle of extra virgin olive oil and fresh garlic greens.

Savoury Chicken GaletteThe green garlic pesto was a bit spicy / chili for the younger fellow, but hit all the right spots with the daughter and husband who love everything chili! You can find the recipe for the Pickled Green Garlic Pesto {or lehsun ka achaar} on Sangeeta’s blog. Use extra virgin olive oil to get a more pesto like feel to it {as she did for my batch}, and reduce the chilies if you don’t like it too hot! BTW, Sangeeta does great personalised  diet plans too, so do stop by if you need one!

Savoury Chicken Galette You can do pretty much anything with a ‘pastry canvas’ like this. To keep the younger one happy, I made a second lot with roasted bell peppers and onions {roasting done in the Philips AirFryer, 10 minutes was all it took}, topped with sliced chicken sausages marinated briefly in a honey-mustard-garlic mix. Keep it vegetarian with roasted veggies, caramelised onion & garlic jam and feta, maybe tomatoes.  It’s smooth, fun to roll out, and even more fun to ruffle over the filling to give it the characteristic galette feel.

Summary: A simple, crisp and delicious pastry base which can go sweet or savoury. This savoury rustic pie can hold varied combinations of toppings, vegetarian or non vegetarian, and is great for picnics, snack boxes. The savoury chicken galette can be assembled ahead of time, or even baked ahead and rewarmed in the oven briefly. Recipe adapted minimally from Baking with Julia. Makes 4 6″ galettes.

Prep Time: 15 minutes
Total Time: 1 hour

  • Galette dough 
  • 80ml ice cold water
  • 45ml buttermilk
  • 120g plain flour
  • 25g cornmeal [makki ka aata]
  • 1/2 tsp salt
  • 90g butter, chilled cubed
  • Suggested toppings {a combination of any of the following}
  • Green garlic pesto {recipe here}
  • Mozzarella
  • Caramelised onion & garlic jam {recipe here}
  • Chicken salami, sausages etc
  • Cherry tomatoes, halved
  • Sliced and roasted bell peppers
  • Sliced onions {roasted with the bell peppers}
  • Green garlic stalks
  • Smoked sea salt
  • Extra virgin olive oil


  1. Galette Dough
  2. Place the flour, cornmeal and salt in bowl of food processor. Pulse briefly to mix, then add chilled butter and pulse briefly until you get an uneven mix from peas to breadcrumb size bits.
  3. With the mchine running, pour in the buttermilk, followed by most of the chilled water and process until a soft, moist dough forms.
  4. Remove, divide into 2, press into flat disks and chill for at least 2 hours.
  5. Assembling
  6. Preheat the oven to 200C.
  7. Divide each disk into two and roll out to about 8″ circles. I cut the edges round with a pastry cutter, though you could just leave it uneven.
  8. Line a shallow platter with the rolled out pastry hanging over the edges, fill it up as you like, beginning with mozzarella, then gently fold the edges over the filling around the sides.
  9. Drizzle some extra virgin olive oil, sea salt, garlic greens etc over the filling and bake for about 30-35 minutes until the pastry is crisp and golden.
  10. Transfer to a cooling rack, leave for at least 10 minutes, then slide off with a wide spatula. Serve warm or at room temperature with a scattering of garlic greens, fresh herbs etc.

Power cuts, high temperatures and no time to bake! Then 2 days ago, the monsoons appeared, schools reopened, and I got a tiny breather. A simple free form pastry filled with fresh seasonal fruit has got to be one of my favourite summer desserts {among a slew of others!} Summer is for stone fruitThere is SO MUCH you can do with stone fruit, it’s amazing! This year the quality has been exceptionally good. I looked at the peaches and wondered if they were ripe enough to peel; I really wanted to see if I could slip ‘them off‘. The fruit was perfect and for the first time in years I looked at a bowl of perfectly peeled peaches. Recipe: Rustic Peach ‘n Plum Summer Galette

Summary: A rustic dessert bursting with flavour and colour, full of all the fruity goodness that summer offers baked into a simple free form tart.

Prep Time: 15 minutes
Total Time: 1 hour

  • Pastry
  • 150g {1 1/2 cups} plain flour
  • 25g {1/4 cup} cornmeal
  • 100g unsalted butter, chilled, cubed
  • 25g {1/8 cup} vanilla sugar {or plain}
  • 2-3 tbsp ice cold water
  • Filling
  • 450g fruit {net weight, peeled, pitted, chopped}, 5-6 peaches, 4-5 plums
  • 50g {1/2 cup} vanilla sugar
  • Juice of 1 lime
  • 1tbsp Kirsch {optional}
  • 1/4 tsp almond essence
  • 2 tsp plain flour
  • 2 tbsp marmalade
  • Topping:
  • 15ml {1 tbsp} cold milk
  • Turbinado/demerera sugar for sprinkling
  • 1-2 tbsp honey
  • Slivered pistachios/almonds for garnish


  1. Fruit filling
  2. Place the fruit in a bowl, add in the remaining ingredients {except flour} and leave to macerate for about 30 minutes in the fridge.
  3. Drain out the juices and reserve the fruit in a large bowl. Place juice in a non reactive pan over low heat and reduce it till it becomes thick and syrupy. Add back to fruit in bowl with the flour and mix well. Chill until required.
  4. Pastry
  5. Combine flour, cornmeal and sugar in the bowl of your processor and pulse 2-3 times. Add chilled butter and pulse 4-5 times, or until mixture resembles coarse meal. With the processor running, slowing pour the chilled water through the chute, processing until the dough begins to clump up. {It should stay together when pinched with the fingertips}
  6. Turn onto a lightly floured surface, and quickly pull together to form a ball, flatten, wrap in film and chill for about 30 minutes or more if the weather is warm.
  7. Assemble
  8. Place the pastry on a large sheet of parchment paper. Starting at the center of the dough, roll out, forming a 14-15-inch wide circle.
  9. Brush about an 8-9″ circle  in the centre with the marmalade .{This will prevent the pastry from going soggy with the fruit juices}
  10. Turn the prepared fruit filling over the marmalade keeping it within the inner circle, leaving a 2-inch border.
  11. Gently fold the border over the filling, overlapping where necessary and pressing gently to adhere the folds, using a touch of water if necessary. Place tray in freezer until the oven preheats.
  12. Preheat the oven to 200C.
  13. Before popping the galette into the oven, brush the overlapping sides of the pastry with cold milk and sprinkle turbinado sugar over it.
  14. Bake for about 30-35 minutes till the crust is golden brown and the filling is bubbly. {Tent the top if the pastry browns too fast}
  15. Remove to cooling rack, and brush the visible fruit portion with honey, and top with slivered pistachios, almonds etc.
  16. Cool for at least 30 minutes to allow the pastry to firm up before serving. {Cutting it too quickly will cause the dough to crack}. We had it cold with a drizzle of single cream.
