Espresso Panna CottaEspresso Panna Cotta … this is what sweet dreams are made up of, and made up of everything I absolutely LOVE. Love a good panna cotta, love coffee and of course expresso. Did a fingerlicking spoon licking good buttermilk panna cotta for Fit Foodie recently, and then remembered this deliciousness which was lurking in my drafts. Time it saw light of day

Espresso Panna Cotta Did I say some time back that we had barely seen desserts or bakes of late? Well seem to be making up for the ‘unsweet’ patch, as far as blogging goes at least. This panna cotta was actually inspired by super talented Bart posting some espresso meringues with a chocolate sauce on a food photography FB group. Then along came my sweet friend Gloria’s Affagato which made my heart skip another beat! ’twas time for espresso…

Espresso Panna Cotta… and the next best thing was an Espresso Panna Cotta. Smooth, silky, seductive with coffee written all over it, how can dessert be so indulgent. My Indian coffee or Bru Panna Cotta is an all time favourite, yet the Espresso Panna Cotta now threatens to knock that off the perch. I love doing panna cottas, and have done loads from buttermilk, to saffron, to mango… and more. ‘Making‘ seems a lame term for a dessert so simple which comes together in a matter of minutes. Then it’s all down to a good chill!

Wholegrain Coffee Chocolate Chip Pound Cake Wholegrain Coffee Chocolate Chip Pound Cake … is what feeds this hungry blog today, with an apology for being MIA for ever so long. I am still baking, I am still making the odd desserts, though I haven’t had too much time of late to shoot the recipes. I’ve baked this particular cake a couple of times, made an espresso panna cotta, and did an oat apple crumble last week.
Wholegrain Coffee Chocolate Chip Pound Cake The cake’s inspired from my buttermilk pound cake. I set out to make a similar coffee cake only to find that badly organised me was out of buttermilk, and ahem, out of baking soda too. With the butter at room temperature, and the prospect of a hungry boy due home from school, substitutions flew in thick and fast! Homemade yogurt to the rescue!

Wholegrain Coffee Chocolate Chip Pound Cake Sometimes it helps to be badly organised. Believe me! The cake came out quite delicious, and I’ve made it a few more times thereafter. Even took one along for the project team I am working with currently … and they loved it! I love that this is a wholewheat cake, with mineral sugar and local instant coffee. Homemade full fat yogurt made it incredibly moist. You could use low fat of course!
Wholegrain Coffee Chocolate Chip Pound Cake Good local ingredients that are not gourmet, found hopefully in every home went into the Wholegrain Coffee Chocolate Chip Pound Cake. Eat it warm or at room temperature and you’re gonna love it. It disappears rather fast so beware! It tastes lovely the next day too, and stays well refrigerated. I would however recommend this tea cake be eaten warm to enjoy the true flavours and texture!

Coffee Chocolate Mascarpone Layered Cake Coffee Chocolate Mascarpone Layered Cake … a promise of deliciousness in every bite. As the name suggests, the cake had everything we love about desserts – Coffee + Chocolate + Mascarpone! These days I crave coffee more than ever, so the cake was meant to have some! There was none other I would have made that day!

Coffee Chocolate Mascarpone Layered Cake ’twas a cake for my SILs birthday. It came together without a plan.  That’s just how life is these days. With the daughter in her final year in school, board exams round the corner, driving, driving and more driving is all I seem to do. The days are a whir of exam pick ups and drops. Loads of fast track shopping as school farewells, graduation ceremonies  etc are part of the muddled weave.

Food on PAB… and then there is junior. Recently back from a trip to HKG with his dad where all they did was eat, he is always hungry. Makes for an ideal guinea pig. He’s currently immersed into Krav Maga, a form of Israeli self defense. In addition is a new found love for boxing. More adds to the list – the dog, the neighbours little kitten {who Coco incidentally hates}, the soup trials, the dessert trials, olive oil cookies … and definitely not salad! 

Food on PABIn the midst of this mayhem, there are recipes being developed for a client. That might explain the ‘trials‘. Between racing around madly, I try and sneak in the odd recipe testing as the deadline approaches fast. Of course there is normal everyday life too … laundry, groceries, da dog, da blog … birthdays too!

Coffee Chocolate Mascarpone Layered Cake The Coffee Chocolate Mascarpone Layered Cake happened as the day progressed. The sponge is my basic ‘in the head‘ recipe. It’s one that never fails me, and one I keep experimenting with it. This time I added a dash of baking powder, beat it in actually, to save time sifting it with the flour. Worked out fine.

As the cream reached a cautious bubble, chocolate pastry creme seemed doable for a filling. It was a cake on the trot. I had the sponges baked and the rest of the components done the night before too! Happiness is … 

Coffee Chocolate Mascarpone Layered Cake For the ‘day’, all I had was the cake to put together or assemble. I did that at the crack of dawn! That’s the fun part, and in many ways a relief. It does amount to a LOT of washing up though, so be prepared.

Coffee Chocolate Mascarpone Layered Cake The cake was special. Beautiful flavours. Light. Moist. Full of flavour! 6 layers of deliciousness. It’s a bit of work I have to admit, but planning ahead is the key. If you get most of the work done a day or two before, you won’t feel the pinch.
