I love twice baked potatoes so these look amazing to me, and with one less cooking step. They're so versatile because you can add virtually anything you want from the veggies you featured, cheese, peppers, broccoli, etc.

Yum! Love potatoes - love your tater pics. I remember we used to microwave potatoes when we were kids but maybe we overcooked them because they always came out wrinkled!
